Tropical Basil Smoothie

By this time of the summer my basil plant is always growing faster than I can handle. So as much as I love herbs like cilantro, parsley, and mint in a smoothie, I’ve been wondering if basil would work, too.

Strawberries and basil is a classic combination, but I had something more tropical in mind… banana, mango, pineapple, coconut milk, spinach (green, not tropical), basil leaves… yum. This smoothie is lovely, if I do say so myself — creamy and sweet with a delicate basil flavor throughout.

Tropical Basil Smoothie

Serves 1 or 2

Ingredients

1 banana
1 cup mango
1 cup pineapple
1/4 cup basil leaves (approx. 6 or 7 large leaves)
2 cups spinach
1 cup light coconut milk

*I used frozen mango and pineapple. If you use fresh, add ice to chill.

Directions

Add ingredients to high-speed blender. Blend, pour, and drink up.
