Pear, Apple, and Cranberry Crisp

November 13, 2022 by Claiborne Ashby

As crisps go, this Pear, Apple, and Cranberry Crisp is a showstopper. It has three fruits, two citrus juices, and a generous portion of buttery topping. Just right for a special occasion.  It’s a Barefoot Contessa recipe that I make every year …

Easter Carrots

April 9, 2022 by Claiborne Ashby

Carrots are currently my signature contribution to Easter lunch. Not because I’m an expert at cooking carrots mind you, but because I found a recipe that includes a sauce everyone loves. To be honest, these Easter carrots are really all about the …

Matcha Latte

October 13, 2021 by Claiborne Ashby

It’s autumn now and I’m beginning to get excited about cold weather and hot drinks, but not just any hot drinks — my favorite hot drink — the matcha latte. Have you tried matcha? It’s green tea leaves ground to a powder, and it has a smooth caffeine …

Basil Pesto (Dairy-Free)

July 23, 2019 by Claiborne Ashby

My attitude toward food is make it at home and keep it as simple as possible, so I don’t do a lot of sauces. This basil pesto, however, is one of my exceptions. I make it all summer long. It doesn’t have Parmesan, and I don’t miss it. Why add the …

Orange Mango Cashew Smoothie

September 16, 2014 by Claiborne Ashby

This is my favorite smoothie of the moment. I love the richness of almond, cashew, and mango mixed with the lightness of orange and parsley. (A squeeze of lemon adds a little extra lift to the recipe.) If I’m honest though, what I’m really into is …

Tropical Basil Smoothie

September 16, 2014 by Claiborne Ashby

By this time of the summer my basil plant is always growing faster than I can handle. So as much as I love herbs like cilantro, parsley, and mint in a smoothie, I’ve been wondering if basil would work, too. Strawberries and basil is a classic …

Beginner’s Green Smoothie

September 16, 2014 by Claiborne Ashby

This is the first green smoothie recipe I ever made. It’s so simple to put together, I used it with only slight variations for months after I bought my blender in 2013. It’s the one the blender salesman gave me. No supplements, no fancy milks, no …

A dolphin for my niece’s 8th birthday. She likes A dolphin for my niece’s 8th birthday. She likes *lots* of animals, but her favorites mostly start with ‘p’ — puppy, panda, penguin, and of course, dolphin (porpoise?) 🎉

This was inspired by a fish drawing she made for me during the pandemic. She described it as a place where everyone is happy 🥲💗

My sister asked me to make an animal for her birth My sister asked me to make an animal for her birthday. I picked hummingbird. She told me her favorite color combination - orange + blue-green. The result, I think, is a tiny message of joy. ~May she find joy in unexpected places 🧡

P.S. There is an actual species of hummingbird that wears rainbow colors. O to V from tail to head 🤩

This is the most inspiring and inspired climate ch This is the most inspiring and inspired climate change discussion I've ever read. According to the author, it's completely doable to restore our climate to pre-industrial CO2 levels by 2050. (Of course, we need to reach net zero emissions, too.) The plan he lays out makes a lot of sense *and* seems to respect the Earth.

“People often ask me why I’m so confident that we can restore the climate. I tell them, “Because it’s been done before.” Nature has removed massive amounts of carbon dioxide from the atmosphere 10 times in the last million years, and likely many more times before then.” - Peter Fiekowsky, Climate Restoration

I’m feeling a renewed sense of optimism for the future. You can find more discussion on my blog. Link is in my profile.

Check out the book and see what you think.
